Jacques Perritaz’s own words from his website, roughly translated:

“The Vulcain is the butterfly of choice at the Cidrerie du Vulcain. The insect pictured on the label opposite (by Gisèle Rime) is a faithful friend during the autumn harvest, wandering among the fruit that has burst on the ground. Here, at this time of year, its populations are swollen by migrants from northern Europe.

The Cidrerie du Vulcain processes fruit from the local Fribourg orchard, namely apples, pears and quinces of old varieties grown on high vines and untreated. The Fribourg terroir, with its cool climate and diversity of soils, allows the expression of very fine nuances in the aromas, all the more so on the old, high-stemmed trees.

The fruit is bought directly from the growers, and sometimes I take care of the harvest myself. This approach helps to enhance the value of old orchards that are currently neglected for lack of outlets on the cider and table fruit markets. In this way, we're helping to preserve a rich and diverse traditional landscape, essential for biodiversity. The project was supported by the FSP (Fond Suisse du Paysage).

The company's flagship products are sparkling cider, partially fermented using the "guillage" technique from Clairette de Die, and cidre bouché from Normandy and Brittany. These ciders are available in different cuvées from one year to the next, depending on the varieties available. These ciders are always "pur jus", fermented on their wild yeasts and coarsely filtered.”
